えつ料理
三川屋さん、料亭です。5月から7月にかけての限定期間しか獲れない魚「えつ」の会席料理をいただきました。小骨が多いので骨切りしてからタタキ、煮付け、酢の物、塩焼、骨せんべい、白子真子の煮付け等々に料理されてました。ご当地の名物料理のようです。
